As an omnivorous third culture kid from a secular Sefardic Israeli family, I've sample Germany’s wide variety of regional cuisines during travel for work across the country. While I enjoy cooking German cuisine at home, once my kosher-keeping Ashkenazi American partner moved in with me, I noticed just how many classic European dishes we couldn’t share with their traditional recipes!
What else could I do? I set out to translate complete Western meals, maintaining the flavors we've encountered while tinkering with their ingredients and techniques, so that people with food restrictions can join in on fuller experiences of local traditions.
Along the way, I'm also developing DIY recipes for global ingredients and dishes from international Jewish communities that we find difficult to source in Germany, as well as penning simplified how-to guides for hosts who plan to entertain guests maintaining restricted diets.
